VALPOLICELLA RIPASSO

Ripaso, Valpolicella Ripasso

Ripaso, Valpolicella Ripasso is crafted from late-harvest grapes grown on the limestone-rich soils of the Veronese Hills in Tregnago. These hills, located at 400 meters above sea level, are part of the historic Cà dei Conti estate, owned by the Rancan family for 300 years. The Cà Dei Conti property, is placed at the foot of Precastio montain, in the Tregnano city, on 5 hectares of land. The vineyard is located on a 400 – 450 metres above the sea hill  and it is completely south-facing.
Marl-limestone morainal soil, rich in structure. Thanks to these characteristics the wine has a optimal structure and alcohol richness.

Planted in Guyot on benches, with dense planting system, it counts about 9000 plants/ hectare. Each vine produces only1kg of grape.

Harvest at the end of October with 5 kg plateaux. A manual selection of the grapes is made, making several passages in the vineyard. Approximately 1 month drying in a loft in optimal temperature, humidity and ventilation conditions. The wine obtained is passed over in the pomace of Amarone.

The resulting wine is aged in second-use French and American oak barrels, with a portion matured in stainless steel tanks on its fine lees for approximately 1 year, followed by 6 months of bottle aging.

A wine of great structure, rich and elegant. The purplish ruby red color with a warm and intense bouquet. Typical aromas of cherry, wild strawberry and spicy notes stand out on the nose. Full-bodied and resistant in the mouth.

Grilled red meats, braised meats, roasts with savory sauces, game. Slightly spicy hard and well seasoned cheeses.
