The Cà Dei Conti property, is placed at the foot of Precastio montain, in the Tregnano city, on 5 hectares of land. The vineyard is located on a 400 – 450 metres above the sea hill  and it is completely south-facing.
Marl-limestone morainal soil, rich in structure. Thanks to these characteristics the wine has a optimal structure and alcohol richness.

Planted in Guyot on benches, with dense planting system, it counts about 9000 plants/ hectare. Each vine produces only1kg of grape.

The grapes are harvested by hand in 5 kg crates, starting at the end of August.

This wine is produced through a white vinification of Pinot Noir, with gentle pressing of whole clusters to obtain only the free-run juice, immediately separated from skins and stems. After a short period of static settling, the clarified must is fermented in stainless steel tanks at a controlled temperature of approximately 18°C.

Once the ageing in steel is complete, the base wine is bottled in traditional Champagne-style bottles with the addition of the liqueur de tirage—a blend of wine, sugar and selected yeasts—to initiate the second fermentation in the bottle. Ageing on the lees lasts for 84 months. The final disgorgement stage involves the removal of the lees sediment and the addition of the liqueur d’expédition.

Colour: pale straw yellow, with a fine, continuous and long-lasting perlage.
Aroma: elegant and harmonious bouquet, featuring evolved notes of bread crust and hints of blackcurrant (cassis).
Palate: dry and well-balanced, with pleasant softness and a long, refined aromatic persistence.

Perfect as an aperitif, it pairs beautifully with fish and shellfish dishes. Excellent with seafood risottos or cuttlefish ink risotto, as well as grilled or fried fish. Thanks to its finesse, this traditional method sparkling wine is also ideal to enjoy on its own, at any time of the day.
